When in Mexico


Enjoy local cuisine!

So I'm back to school, after sabbatical years off school, taking only English and craft classes I finally took the courage to enroll in official, credited and PAID college classes.

To my luck, since nothing comes easy, my first week is also the week I was assigned to a business trip to Mexico City. It's pass midnight and I cannot get the Blackboard to launch and I already have homework to be delivered this Wednesday.

Go figure.

Because I am a responsible student, I ordered room service and stayed in to cover good two chapters of an extra text, while enjoying a good portion of guacamole, ceviche and sashimi. A bulletproof coffee cup and lots of water. Going strong on the diet.

Poached Egg over Kale, Onions and Tomatoes

I guess all what really takes is a bit of effort in the kitchen. Meal done in less then 15 minutes. Daughter love it. I love it. Going strong for a better life.

Ingredients

- 1 Poached Egg
- 1 cup of Kale
- 1/3 of Onion copped
- 10 Cherry Tomatoes
- 1 Teaspoon of Olive Oil
- Salt
- Pepper

Directions

In a skillet sauté the onions on olive oil until they become clear color, add the tomatoes and the kale, and cook for a few minutes until kale is soft. Add salt and pepper to taste.
Transfer to the plate and add the poached egg on top.

Cajun Yard Dog Restaurant Charlotte, NC

If you don't know where to go for dinner tomorrow and you love Cajun food, please head out to the Arboretum in south Charlotte, NC. The service is excellent, the total layback and ambiance makes you travel to New Orleans in seconds.

Don't let the location scare you away. At first when we stopped outside the restaurant we were not so sure if we wanted to wait. There was a piece of paper and a pen by the door with a sign asking us to write down our name and the number of people in our party, and we understood that it was the "wait list".

Soon enough we noticed people being called and crossed off the list, so it must be a good sign if people were waiting that long for service. After about 30 minutes wait our turn came and we understood what was the restaurant about.

We ordered as starter the BBQ Shrimp and Grits and it was just to die for. As entreé, Chris went for Crawfish Étouffée while I got Blackened Mahi, seared blackened with housemade horseradish sauce, sides of Smothered Cabbage. It was all delicious and in good size portions, to not let anyone down.

For Sophia we didn't go for the kids menu, we ordered sides of Red Beans and Rice and Fried Catfish, the rice and beans were a bit too spice for here, but she absolutely loved the fried catfish.

To finish the night we had fresh baked cobbler peach pie coming straight out of the oven to our table. Can't beat it.

Taco Tuesday Deconstructed


Not quite sure if I can call it a Deconstructed Taco, but that's what we had tonight for dinner. C. as always surprises me in the kitchen, and on our fight to get slim sometimes we crave things that we don't even believe we can miss so much. And I missed re-fried beans. Simple dinner. Pretty much all store bought. And worry free.

Tomato soup


A few weeks ago Chris's aunt gave us a whole bag of heirloom tomatoes from her garden, and we didn't eat as we should so they were about to go bad when he decided to make tomato soup. Don't ask me what he put in there, but was extremely delicious, and to help fill up a bit he used the rest of the steak that we didn't eat this morning and grilled with cheese on top of wheat bread. Off course we need to eat cottage cheese very often in this house because I'm pregnant, so the intake of calcium has to come from everywhere, so, there we go. Easy dinner.

Philly Cheese Steak


Breakfast deal! We had steak for dinner last night, and I didn't post here, so this morning we ate the leftovers from dinner as a breakfast Philly Cheese Steak. All what he did was to leave the meat to marinate over night, cut in small thin slices, sauteed with onions, green peppers, and a little bit of cheese (since we didn't have provolone, we used mozzarella cheese), on English muffins and with a sunny side up egg on the side.
Perfect huh?!?

Crab Salad on English Muffins


So that was my dinner tonight. I'm so spoiled by my boyfriend that's sometimes is embarrassing to say that I don't ever cook. But why would I when everyday he comes home and creates something so delicious like what we had a few hours ago. And so simple too. All he did was a crab salad  (crab, green peppers, garlic, dill, mayo, salt and pepper), on top of  English muffins, covered with provolone and cheddar melted cheese. As a side, he added a half peach topped with cottage cheese. Do I need something else????
